Chicken Broccoli Stir Fry
1 Tablespoon olive oil
4 Blue Ribbon Foods boneless skinless chicken breast, cubed
½ cup Blue Ribbon Foods chopped onions
2 garlic cloves, minced
1 inch piece ginger, peeled and minced
1 Tablespoon Tamari Soy Sauce
1 Tablespoon sesame oil
3 packages Blue Ribbon Foods broccoli spears
1 teaspoon red pepper flakes
2 Tablespoons water
1. In a medium bowl, add chicken, ½ of the garlic,1/2 of the ginger, Tamari soy sauce and sesame oil. Marinate at room temperature for 15 minutes.
2. Heat a large nonstick skillet over high heat. Add ½ Tbsp. olive oil and heat. Add the broccoli spears and onions, and stir-fry for 1 minute. Add the remaining garlic, ginger, 2 tablespoons of water, and season with pepper. Stir-fry until the broccoli is bright green but still crisp, about 3 minutes. Transfer to a plate.
3. Allow the skillet to get very hot again, and then add remaining ½ Tbsp. olive oil. Add the chicken and red pepper flakes. Stir-fry for 8-10 minutes or until chicken has been cooked through. Return the broccoli to the pan and toss to heat through.
4. Plate and enjoy!
