Fruit Salsa with Jicama Chips
2 mangoes, peeled and chopped
1 kiwi, peeled and chopped
1 small sweet onion, peeled and chopped
1/2 red pepper, chopped
1 tsp. fresh ginger, grated
1 Tbsp. lime juice
1 Tbsp. cilantro
1/4 tsp. ground red pepper
1 medium-large jicama, peeled and sliced into chips
1. Add first 8 ingredients to a bowl and stir gently to combine. Cover and refrigerate for at least ½ an hour.
2. Peel jicama and cut into ¼ inch thick slices.
