Spicy Fish and Shrimp Soup
4 oz. Blue Ribbon Foods chopped onions
1 tsp. minced garlic
1 Tbsp. Chili powder
1½ cups all natural, low-sodium chicken broth
1 small can (~4 oz.) green chile peppers
1 tsp. ground cumin
1½ cups peeled and diced tomatoes
4 oz. Blue Ribbon Foods chopped green peppers
4 oz. Blue Ribbon Foods peeled & deveined shrimp
2 Blue Ribbon Foods halibut fillets 6 oz.
½ cup plain yogurt
1. Coat a large saucepan with olive oil. Add onions and sauté for 5 minutes. Add garlic and chili powder and sauté for an additional 2 minutes
2. Add chicken broth, chile peppers, and cumin, bringing to a boil then reducing heat to low. Cover and simmer for 20 minutes
3. Add tomatoes, green bell pepper, shrimp and fish. Turn heat up and bring to a boil once again. Reduce heat, cover and simmer for 5 minutes.
4. Add yogurt and stir to incorporate. Heat through and then serve.
