Watermelon Feta Salad
4 cups diced watermelon
1 teaspoon jalapeño pepper, seeded and diced small
1 tablespoon white wine vinegar
½ tablespoon squeeze basil
¼ cup olive oil
Pinch of salt
Fresh cracked pepper
¾ cup feta cheese
- Place the diced watermelon and pepper in a large bowl.
- To make the dressing, place the vinegar, basil and oil in a separate bowl and whisk to incorporate.
- Add the dressing, salt and pepper and feta to the watermelon and toss to coat. Serve immediately or refrigerate for up to 4 hours.
