Sherry Braised Beef Short Ribs

Serves 4

  • 3 slices bacon, diced small
  • 3 Pounds beef short ribs
  • 1 Cup onion, diced
  • 4 Cloves garlic, minced fine
  • 2 Tablespoons all purpose flour
  • ¾ Cup dry sherry
  • 1 Quart beef broth
  • 1 Bay leaf
  • 3 Sprigs fresh thyme
  1. Brown the bacon in a stainless skillet until brown and crispy. Remove the bacon with a slotted spoon and place in a large Dutch oven. Place the short ribs into the same skillet and brown all sides very well. Place the browned short ribs on top of the bacon in the Dutch oven. Place the bay leaf and thyme to the Dutch oven.
  2. Add the onion to the same skillet and sauté until caramelized. Add the garlic to the onions and sauté for so seconds. Add the flour and cook one minute. Add the sherry and simmer; stirring often for 2 minutes.
  3. Add the onion mixture to the Dutch oven and pour in the beef stock. Move the Dutch oven to medium high heat on the stove top and bring to a simmer. Cover the Dutch oven and place in a pre-heated 350 degree over for 2 hours: or until short ribs are fork tender.
  4. Remove the short ribs and place on serving dish. Place the Dutch oven over medium-high heat and reduce sauce slightly before serving.
