Grilled Halibut with Butter Wine Cilantro Sauce
Serves 2
Ingredients:
- 2 Halibut fillets, thawed
- Salt and pepper, to taste
- Olive oil to brush halibut
Butter Wine Cilantro Sauce
- 1 Tablespoon olive oil
- 1 Tablespoons shallot, diced small
- ¼ Cup dry white wine
- 2 Tablespoons butter
- 1 Tablespoon fresh cilantro, chopped medium
- Salt to taste
- 1 Teaspoon fresh lemon juice
- Pre-heat grill to medium high. Season the halibut fillet with the salt and pepper to taste. Brush the seasoned fillets with olive oil. Place the halibut on the hot grill for 3 minutes per side to create grill marks. Lower the heat to medium low and continue to cook; covered until just done. Place on serving plates and cover with foil to keep warm.
- Place your skillet over medium heat for one minute. Add the oil and swirl to coat pan. Add the shallot and garlic and sauté for one minute; being careful not to burn the garlic. Add the wine and simmer until liquid is reduced by 2/3rds.
- Add the butter and cilantro to the pan and stir with a whisk. Add the lemon juice and swirl the pan to incorporate. Pour sauce over halibut fillets.
