Game Day Layered Taco Dip

Serves 6

  • 1.5 pounds Extra Lean Ground Beef
  • Cooking spray
  • 1 teaspoon cumin
  • 1/2 teaspoon red pepper flakes
  • 1.5 cups low fat sour cream
  • 1.5 cups low sodium salsa
  • 1.5 cups fat free cheddar cheese
  • 1 medium tomato, seeded and diced
  • 1 ripe avocado, peeled and diced
  • Baked tortilla chips
  1. Spray a hot large skillet with cooking spray and add the lean ground beef. Cook until just done. Add the cumin and pepper flakes and cook an additional minute. Strain and place the cooked beef in a large bowl to cool.
  2. Remove the seeds and core from the tomato and dice small. Seed, peel and dice the avocado into small pieces.
  3. Layer the cooked ground beef into a 10-inch pie plate. Top with an even layer of sour cream; followed be a layer of salsa. Top with a layer of the shredded cheese. Garnish the top with the diced tomatoes and avocado. Serve with the baked tortilla chips.
